Have you ever been sitting there on Taco Tuesday just wishing you could indulge in a plate full of tacos without regretting it afterwards? Just because you’re trying to lose weight with Medifast doesn’t mean skipping out on the Taco Tuesday festivities; you just need a healthy taco recipe, like the one we’re about to share with you today!

Using fish instead of beef knocks down the calories in this recipe, but still has tons of flavor. If that wasn’t enough this healthy taco recipe uses a different type of tortilla: cauliflower tortillas.

Have you ever tried cauliflower as a substitute for tortillas or pizza crust? (Check out this cauliflower pizza crust recipe from Rachel Ray.) It’s actually quite simple and much more nutritious. With only 25 calories per cup and far less carbs and sugar than flour or corn tortillas, it makes the perfect gluten-free substitute for a healthier taco recipe.

Fish Tacos with Cauliflower Shells

1 Serving: 1 Lean, 3 Greens, 3 Condiments, 1 Healthy Fat

INGREDIENTS

Tortillas

  • 1 cup grated cauliflower
  • 1/4 cup egg beaters
  • ½ cup 2% reduced-fat shredded cheese
  • 1/8 tsp Southwest Chipotle Mrs. Dash

Taco Filling

  • 3.5 oz Tilapia
  • 1 tsp olive oil
  • 1/2 cup shredded cabbage

You can top your tacos with salsa or ranch dressing, too!

Salsa

  • 1/2 cup chopped cilantro
  • 1 Tbsp. chopped onion
  • 1 tsp. fresh squeezed lime juice
  • 1 Tbsp. tomato salsa

or

Cilantro Lime Ranch Dressing

  • 2 Tbsp. Walden Farms Ranch dressing
  • 1/4 cup chopped cilantro
  • 2 tsp. fresh lime juice
