Packing yourself lunch is just as important as packing the kids’ lunch, so make time to make yourself a healthy and delicious lunch. While you can always choose from our selection of Medifast meals and snacks, we’re here to give you a few healthy lunch and snack ideas that both yourself and your kids will love – kill 2 birds with 1 stone! Check out some of these ideas:

Chickpea Nuggets

You can’t deny that the little kid inside of you still craves chicken nuggets from time to time, but the smart adult inside knows that they’re not healthy. Vegan chickpea nuggets are here to change that and make nuggets a healthy lunch option. See a simple and tasty chickpea nugget recipe here. Pro Tip: pack hot nuggets in a thermos to keep them warm until lunchtime for school lunches and your own on-the-go meals.

Wrap it Up

Wraps are one of the easiest lunches you can throw together if you’re in a pinch for time. Cut them up into fun little pinwheels for the kids’ lunches and they’ll be happy campers! For some unique recipes check out these healthy wrap ideas.

Apple Slices

Apple slices are a nutritious snack, but they’re impossible to pack form lunch due to how quickly they brown after being cut, right? Not with this apple slicing quick tip: soak your apples in cold water with about a tablespoon of lemon juice for 5-10 minutes before packing. The lemon juice keeps the apple from browning without altering the flavor. Brilliant! Add some peanut butter or greek yogurt for dipping to make this snack even better.

Sweet Potato Chips

Who doesn’t love to snack on chips? They’re crunch and salty and just all around delicious, but typically pretty unhealthy. Why not try making your own healthy sweet potato chips? All you need is a sweet potato, spray oil, salt and a microwave! See the recipe and find our just how easy it can be.
